Printemps du Goût, located on the eighth floor of Printemps Homme in Paris, welcomes a new gastronomic gem: IKÊ. This innovative restaurant by chef Stéphane Abby, renowned for his daring culinary creations, offers a unique gastronomic experience that fuses the techniques and flavors of Japanese and South American cuisine.

A hybrid culinary experience

IKÊ takes its name from ikejime, a traditional Japanese fish-slaughtering technique that preserves the freshness and taste qualities of the flesh. This method is at the heart of Stéphane Abby’s culinary vision, which combines the elegance and precision of Japanese cuisine with the liveliness and influences of South American flavors. The menu features a variety of creative dishes that marry ingredients and techniques from both cultures, creating complex, nuanced flavors.
