A Neapolitan at heart, pizza chef Marco Casolla brings the Toulon gastronomic scene to life with his exceptional pizzas.

His first restaurant, La Fabbrica Di Marco, holds the coveted “Verace Pizza Napoletana” label, crowning the talent and creativity of its emblematic chef.

Since summer 2020, his second restaurant Il Parasole Di Marco located Plage du Mourillon, celebrates the Dolce Vita of the Amalfi coast sowing the aromatic scents of the Chef’s recipes on the seafront promenade.

EXCEPTIONAL CREATIVITY

Far from the banality of pizza classics, Chef Marco Casolla is a virtuoso who composes works of art: dough with creative technique and sophisticated flavor combinations.

A master of traditional techniques, the Chef blends three varieties of Italian flour to obtain a dough that is then left to rest for 96 hours in the cold.

His first signature creation: the rosé pizza, where the vinosity of the dough surprises and sublimates every flavor Marco Casolla chooses to add.

Since then, Delizia al Limone, a creative delight based on Sorrento lemons, and Caffècotto pizza, a combination of Arabica coffee, eggplant and Grandi Biscotto prosciutto, have been added to the collection of must-try recipes, both sweet and savory, reflecting the Chef’s creative genius.

Parmesan 36 months and other distinctive cheeses, artisanal Italian cured meats, fresh or grilled seasonal produce… all these elements adorn Marco Casolla’s pizzas, visual pleasures and the first promises of a moment of unforgettable gustatory pleasure.

Il Parasole also offers a range of iodized and gourmet specialties, according to the Chef’s seasonal inspirations.

Chef Marco Casolla’s first venue and creative ground, opened in 2013, La Fabbrica Di Marco is a benchmark in Toulon, traditional Italian trattoria to eat in or take away.

This charming establishment warms up the historic city center of this port city with its southern accents.

Labelled “Verace Pizza Napoletana” and enrolled in the Collège Culinaire de France, Fabbrica di Marco reflects the commitment of a welcoming, generous and sunny Chef.

From the jasmine terrace to the interior wall of planted terraces, Atelier 360 has created a setting that symbolizes Marco Casolla’s refined, natural cuisine.

The natural choice was for fresh, durable materials: white ceramics and shades of green, wood and terracotta…

On the ceiling, colorful parasols, the hallmark of the place, illuminate the space. These iconic objects are reminiscent of the Italian beaches of Naples or Capri, and carefully preserve the warm light of Italy’s most generous chefs.
