We recently discovered this cuvée and fell under the spell of this champagne of rare elegance and freshness.

Old gold color with luminous highlights. Fine, creamy bubbles. Concentrated, expressive, airy nose. Notes of red fruit, toast, vanilla and spices. Racy and elegant. Spherical density on the palate, revealing the aromas of the nose. Long, fresh minerality.
Terroir : Marne Valley.
Crus Charly-Sur-Marne and Saulchery.
Parcels: Les Chauffours, Les Gains.
Grape varieties: 80% Pinot Noir, 20% Pinot Meunier.
Geology Soil/Subsoil: Marly-limestone on a hillside subsoil of soft Lutetian limestone. Presence of millstone and flint.
Vine growing: In full conversion to organic farming.
Biodynamic Viticulture since 2009 (certification not currently claimed ). Natural flora and mechanical tillage. Natural cultivation of dedicated vines, complemented by the terroir philosophy and expertise of Jean-Marc Charpentier. His agronomic knowledge, combined with his sensitivity and intuition, enable him to strike just the right tone with his vineyard.
VINIFICATION
Pre-harvest: Monitoring of ripeness by scientific analysis and organoleptic tasting of grape berries to estimate the optimum harvest date.
Harvesting: Hand-picked with rigorous plot-by-plot sorting. After a year’s careful attention to the vines, the right harvest date for each plot produces a grape juice with a naturally ideal taste profile.
Fermentation: Temperature-controlled stainless steel tanks. Long alcoholic fermentation at ultra-low temperature with indigenous Champagne yeasts selected for their ability to bring fermentation to a successful conclusion. Natural malolactic fermentation for biological wine stability and SO2( sulfur dioxide) reduction.
Assemblages et Vins de Réserve : Blending of only the “Cuvée” fraction with reserve wines aged in old oak barrels, Champenois and Burgundy.
Ageing: 60 months on laths.
Disgorgement: 6 to 10 months before shipping.
Standard dosage: 4.5 g/l.
Closure: Technological cork made from natural cork.
