The Auberge du Jeu de Paume pastry chef presents her Christmas log Nestled in the heart of the Domaine de Chantilly, the Auberge du Jeu de Paume blends in with the richness of the local heritage. Between the Château de Chantilly, the Grandes Écuries and the Jardins du Château, the Auberge du Jeu de Paume offers an ideal location, a daily source of inspiration for pastry chef Carole Lesquer.

So it’s only natural that, in this festive season, the Auberge du Jeu de Paume should pay tribute to our cultural heritage with its log, a recreation of Chantilly’s “Jardins de la Volière”. This poetic, plant-based creation, in keeping with the cuisine on offer, is a replica of the parterres at the entrance to the Château de Chantilly, designed by landscape gardener André Le Nôtre. Carole Lesquer has imagined it to be gourmet, light and not too sweet, in keeping with all the dishes offered on the menu of the Auberge du Jeu de Paume restaurants.

Composed of a marjoram-infused mousse, pan-fried pears, a caramel and chocolate cream and a cookie crunch, this log subtly blends the finesse of the plant, the freshness of the fruit and the indulgence of the chocolate and caramel. An ideal creation to finish off a festive meal, and one that will have everyone in agreement.
