Hotel Castille launches Sinoira Castille, a gourmet break inspired by Piedmontese aperitivo
From November 28, the L’Assaggio restaurant at the Hotel Castille Paris – Starhotels Collezione *****, 33 rue Cambon in Paris, is offering the Sinoira Castille, a genuine Italian aperitif every Wednesday from 6.30 to 8.30 pm. On the program: the best of Italian cuisine to nibble on, while enjoying Signature cocktails or excellent Italian wines in a convivial atmosphere, enhanced by the refined décor of the L’Assaggio bar and its patio. Young Chef Pablo Sabariego and his Second, Sasha Arandjelovic, have immersed themselves in the Piedmontese gastronomic tradition of merenda sinoira to create an authentic aperitivo, adapted to chic, urban culinary codes. The Signature cocktails are designed by the hotel’s barman, Suneildrasingh, a native of Mauritius who has been working for the world’s most renowned venues for 19 years and takes part in major international competitions.
The merenda sinoira is an ancient Piedmontese tradition, a frugal late-afternoon meal that women prepared and brought to men working in the fields. Enjoyed with family and friends, it was an opportunity to relax after the hard work of the afternoon, and to regain strength before the evening’s work, which lasted until nightfall. As the original home of the aperitivo, Piedmont is a rich source of culinary inspiration. La Sinoira Castille offers a selection of some of the finest products and dishes in Italian gastronomy. The cured meats and cheeses are selected by de Raffinati, an Italian maturing house and delicatessen, and the specialties are created in the kitchen by the Chef and his brigade.

Sinoira Deluxe – 59 euros – Mini fried pizza with Buratta and Red Prawns – 30-month aged Curatello ham – Pecorino di Fossa (goat’s cheese aged underground in clay pots) – Artichoke hearts marinated in pesto – Red tuna tartar, Daterini tomatoes confit with basil – Steamed lobster roll – Homemade watercress – Piedmont Tonda Gentile hazelnut – Poached egg, potato mousse and black truffle – Choice of beverage from the Signature cocktails and wines Signature cocktails and wines Passionate about mixology, spices and fine spirits, Suneildrasingh has set out to create cocktails that evoke Italy and its traditional gentle way of life.
