Originally was the Dehesa. This Arab-Andalusian word means “virgin land”. It all starts there, in the shade of century-old olive trees: La Dehesa, enclosed in the mountain range in southwestern Spain, is an exceptional ecosystem based on the principle of agroforestry. La dehesa is one of Europe’s last protected biodiversity reserves and one of the last bastions of artisanal excellence.
Born into a Spanish farming family and a French artisan father, Florence Chatelet Sanchez, founder of the brand, was immersed from an early age in the culture of taste, respect for nature and the nobility of the artisanal gesture. In 2011, in the midst of the agricultural crisis in Spain, the young woman decided to leave her career in banking to support a farm in the heart of the mountains of Extremadura. Then begins the adventure By DEHESA.
For more than 7 years now, as a co-producer, By DEHESA has been committed, both humanly and financially, to its 16 eco-responsible producers . At the heart of By DEHESA products, there is the essential gesture of the artisan producer.
