Iconic Chef Yves Camdeborde arrives for a season at the 5-star Hotel M in Megève!
The Bureau d’Etude Gastronomique and the Buildinvest Group, owner of the M de Megève, have come up with the idea of bringing together talent, prestige, gastronomy and a love of the mountains in a unique venue, by inviting the high-profile chef Yves Camdeborde to sign a luxury tapas menu for the guests of the M de Megève.
Recognized as one of the fathers of bistronomy, which he excels at in his hotel-restaurant in Paris, the chef agreed, at Sébastien Ripari’s request, to share his creativity, expertise and passion for gastronomy with guests at Le M de Megève.
“I’m a mountain man from the Pyrenees. I love the mountains in summer and winter, and Megève is one of my favorite places to live.
I’m delighted to have the opportunity to create an original tapas menu for the magnificent “M”.
Why tapas? “For me, tapas is the cousin of the French hors d’oeuvre. Tapas are smaller portions, just as gastronomic, which should be explosive, surprising, tasty and singular!
During a winter sports holiday, there’s sometimes a lack of this light, diverse, gourmet offer, where everyone can find pleasure at their own convenience and in sharing.
The tapas culture is directly linked to conviviality and shared pleasure, thanks to a wide choice of products to enjoy by the fireside, with family or friends. “says Yves Camdeborde.
A native of the Béarn region, Yves Camdeborde cut his teeth in some of the world’s greatest and most prestigious establishments, including the Ritz, the Tour D’Argent and, above all, under the tutelage of chef Christian Constant at the Crillon.
His cuisine is personal to him, using quality products that are within everyone’s reach. His aim is to offer everyone the chance to sample French gastronomy in an atmosphere that reflects his warm, friendly image.
In 1992, he opened his first restaurant, La Régalade, in the 14th arrondissement. For more than 10 years, he served traditional and revisited local cuisine.
He now owns the restaurant Le Comptoir in the heart of Saint Germain des Prés, at the Carrefour de l’Odéon.
Yves Camdeborde is well known to the general public, thanks in particular to his appearances on TF1, France Télévision, M6, LCI… A keen reader of literature, he has published a dozen cookery books.
Today, he is regarded in France and around the world as the precursor and founder of this marriage of bistro cuisine and gastronomy: La Bistronomie.
