Michelin Guide 2016: Alain Ducasse’s third star and his “naturalness” menu

A few days ago, the Michelin Guide revealed its ranking of the best French restaurants of 2016. Multi-starred chef Alain Ducasse has been awarded a third star for his “vegetables-cereals-fish” culinary concept, launched in 2014 at the Plaza Athénée in Paris. While last year’s menu only garnered two stars from the Guide Rouge, today the ultimate distinction has finally arrived, rewarding a high-flying work that puts the product, fresh and in season, at the heart of its culinary compositions.

For the reopening of the Plaza Athénée a year and a half ago, Alain Ducasse had promised an original menu, featuring dishes based on the “vegetables-cereals-fish” combination, in a room totally redesigned by Patrick Jouin and Sanjit Manku, who imagined a marine and plant decor placed under the sign of naturalness and respect for the Earth. It was a daring gamble,” commented Michelin Guide director Michael Ellis, “and one that has clearly paid off. These three stars “confirm that French cuisine is moving in a new direction.With the cuisine of naturalness, we have paved the way for this humanist approach to cooking, which the planet urgently needs,” declared Alain Ducasse.

The menu at the Plaza Athénée features the flagship dishes of Alain Ducasse’s plant-based cuisine: green Puy lentils and caviar, delicate perfumed jelly; quinoa grown in Anjou, mushrooms and sloes, black truffle; scallops from Chausey, cauliflower in a fine crust, black truffle… Menus in tune with new expectations for fresh local produce. The flavors of these fruits and vegetables, grown with respect for the rhythm of the seasons and picked when ripe, offer a unique experience and have made the success of a culinary concept that continues to seduce.
