Hotel Banke unveils its new autumn menu

The Hôtel Banke, a 5* boutique hotel in the Opéra district, renews itself with the seasons and unveils the new autumn menu for its Josefin restaurant.


Faithful to the Hotel Banke’s high standards and desire for excellence, and attentive to its culinary influences, Chef Cyril Chevalier has created fine, original dishes to delight every guest. In plates with a refined, elegant presentation where each food item is highlighted, the Josefin’s cuisine remains up to date to delight the taste buds, from“Pressé de foie gras de canard et gelée de mandarine” to“Saint-Jacques à la plancha et poudre de réglisse” to“Spaghettini et crème à l’huile de truffe blanche et truffe noire grâée“…

For this autumn-winter season, I wanted to highlight forgotten vegetables, roots and mushrooms, such as truffles. At a time when a number of countries are getting ready to meet in France for the COP21 summit to protect the environment, it seemed essential to me to promote the terroir, authenticity and quality of products from our beautiful regions. Add to that a touch of whimsy to whet our guests’ appetites and take them off the beaten track. “explains Cyril Chevalier, chef at Josefin.

To enhance the culinary experience of Josefin guests, each dish is accompanied by a suggestion of wine or spirits that perfectly match the chosen dish.

To end the meal on a high note, the menu concludes with new gourmet desserts, all delicacy and subtlety:“Millefeuille aérien et mousse légère au caramel”,“Dacquoise et croustillant noisette”,“Orange et pamplemousse confits avec opaline à la poudre d’amande”

For the most curious or gourmet of diners, Cyril Chevalier is also offering a“Symphony for the taste buds in 7 dishes” for 95 euros, to be shared between two or more guests. This involves tasting seven of the dishes on the menu, from the savory appetizer to the sweet dessert…
