UNIQUE ATMOSPHERE
Pushing open the door to Jefrey’s is like entering a special place. The cozy space invites you to take a timeless break. The decor, imagined by renowned British designer David Draier, blends the best of Anglo-Saxon and French traditions with a touch of the 20s. Club armchairs, Chesterfield sofas and banquettes, subdued lighting: the first room is intimate, with four comfortable seats at the bar and a small adjoining lounge. The overhanging mezzanine offers a second atmosphere reminiscent of a London gentlemen’s club. A sublime library of spirits takes pride of place here.
A special feature of Jefrey’s is that enthusiasts can store their own bottles from the selection on site, and come and taste them at their leisure.
FROM COLLECTION COCKTAILS TO CLASSICS
Jefrey’s lives by the rhythm of the seasons and fresh produce. The bar offers two creative cocktail collections a year. Autumn–winter or spring–summer,
the same research and the same high standards are there, with a rigorous choice of spirits, homemade syrups or infusions and elegant decorations. Lovers of light, delicate cocktails will delight in the Pistache Moustache (Rhum Pampero Oro, lime juice, homemade pistachio syrup, cloudy apple juice, chilli bitter concentrate, raw cider) or Ma Bonne Poire (Vodka Torunska Coing, pear nectar, pear liqueur, homemade vanilla syrup, lime juice). Those who prefer
powerful, rich cocktails will be tempted by the Tour du Temple (Bourbon Smooth Ambler, Gran Classico, Vermouth rouge Cocchi Barolo Chinato, Cynar, Violette,
Concentré de rhubarbe) or the Zapothèque Mule (Tequila Don Julio, Cachaça Engenho Da Vertente, Mezcal Alquimista, Lime Juice, Elderberry Cordial, Hot Spicy Syrup, Ginger beer).
Each cocktail tasted arouses curiosity and invites you to come back for more, or to ask the head bartender to create a custom one…
For those more attached to tradition, the Vieux Carré, the Sazerac, the Greenpoint, the Manhattan and all the other classics are of course available for tasting. Most cocktails are priced at €12, with the most affordable starting at €10 and the most prestigious at just €16.
A SHARP SELECTION OF WHSIKIES AND SPIRITS
Another special feature of Jefrey’s is the spirits menu. Nearly 200 references from a precise and rigorous selection, including more than a hundred
whiskies, whiskeys and bourbons.
A tour of the world of malt, from Scotland (where all regions are represented) to Ireland, Japan and the United States, via little-known destinations such as Sweden and France. Jefrey’s also boasts one of the capital’s finest offerings of Specials Releases, limited editions and special bottlings that will delight lovers of rare bottles. Jefrey’s jewels include the prestigious and unobtainable Port Ellen 1983 27yo, Strathisla 1963 43yo, Ardbeg Old and rare single cask 20yo, Glen Grant the octave 1972 38yo and Karuizawa 1984 30yo.
The collection also includes many more affordable nuggets, such as Mackmyra Brucks (Sweden), Yamazaki 18 years (Japan), Glen Keith 1999 12 years “Closed distilleries” (Scotland, Highlands), Michel Couvreur’s Vatted Malt aged in Burgundy or Sazerac Rye whisky 1995 18 years (USA), as well as
a wide choice of Single Malts bottled by the most demanding houses such as Signatory Vintage, Duncan Taylor or Gordon McPhail.
THE BARTENDER:
GUILLAUME BISIAUX
Atypical profile, Guillaume Bisiaux is not a pure product of the hotel school, since he joined the world of the bar after a mission in the Air Force as a
Commando Parachutist. This discipline enabled him to quickly take on responsibilities in his first position as bartender at the Four Seasons Resort Provence, where he developed the hotel bar and team. Guillaume continued his experience with Yan Daniel at the Park Hyatt Paris Vendôme before taking charge of the bar at the Prince
de Galles for its reopening. For the past year, Guillaume has been at the helm of Jefrey’s, giving this cozy bar a unique signature.
