Artisans at heart and resolutely creative, the Chefs of Maison Lenôtre are once again the interpreters of a bold, gourmet log, in collaboration with Maison Pierre Frey.
This association came about quite naturally, as the professions of haute gourmandise creator and fabric publisher are ultimately very similar.
Both custodians of an exceptional heritage and trendsetters, each develops new collections with the same exacting standards of quality and the finest raw materials. Both houses, members of the Comité Colbert, work with craftsmen of undisputed expertise: dyers, weavers, printers, upholsterers in the case of the former, and confectioners and chocolatiers in the case of the latter.
Maison Pierre Frey is a family story. Grandfather Pierre founded the company in 1935, setting up shop in Paris in the building at 47 rue des Petits Champs, which has since become the company’s emblem. His son Patrick took over from him and now works with his three sons.
To design the Yule log, Patrick Frey and his eldest son Pierre, with the complicity of Guy Krenzer, Lenôtre Creative Director, imagined a warm and comfortable lounge behind the façade of the “47”, covered in the large multicolored lozenges of Carriacou fabric, one of the House’s best sellers.
For one evening, Lenôtre’s craftsmen were transformed into veritable decorators …
Through pulled sugar windows and white chocolate walls, we discover a warm and cosy atmosphere, a miniature version. Chocolate armchairs and sofas are topped with soft calisson-style cushions, and striped carpets and curtains are revisited in marzipan.
A mountain of confectionery gifts is laid out in front of the dark chocolate mantelpiece, at the foot of the Gianduja chocolate Christmas tree.
Nothing is missing to complete this sweet interior!
Bold in form, the log is equally bold in flavor, the result of a subtle blend of savory layers: a crunchy praline, sunflower seed and roasted dried fruit base, topped with a creamy cream and mousse, both with milk chocolate and passion fruit.
Accompanied by a pineapple sauce marinated in lemon and Tasmanian pepper infused with Bourbon Vanilla, in keeping with the Aboriginal theme of the next Pierre Frey collection, to be launched in 2015 to celebrate the 80th anniversary of his birth…
Thanks to the talent of our pastry chefs, this miniature gourmet setting appears larger than life, just waiting to be enjoyed by family and friends!
