The Fruit Fiction flying tart: Shortcrust pastry with fresh basil, topped with lemon mascarpone cream, with cubes of marinated salmon, red endives, cherry tomatoes, Granny and Red Chard green apples, turnip and fennel, mango and flowers.
Explosion mangue-saumon” éclair: “Eclair topped with cooked salmon flakes, smoked salmon julienne, mango brunoise, combined with Isigny lemon cream. Glaze with pomelo and diced mango.
Explosion Pomme-Crabe” éclair: “Eclair filled with Atlantic crabmeat, brunoise of green apple and ginger. Almond milk glaze and diced green apple.
Sweeten your taste buds with delectable sweet treats…La Constellation Abricot: Bavarian mousse and apricot compote, Genoa bread with olive oil, shortcrust pastry and white chocolate ring.
Constellation Pêche will surprise you with its sweetness and fruity lightness, while Constellation Cerise, skilfully combined with dark chocolate, will satisfy even the most demanding gourmets.
L’éclair illimité Framboise-Avocat: Eclair filled with tart raspberry and avocado, raspberry glaze and white chocolate rings.
L’éclair illimité Fraise-Poivron: Eclair topped with candied red bell pepper cream and seasonal strawberries, strawberry icing and white chocolate rings.
Melon-Groseille Bubble Tart: Tart filled with frangipane pearled with redcurrants, topped with a lavender honey cream, watermelon and Charentais melon balls, redcurrants, crystallized verbena leaves and fresh pansies.
