William Pradeleix opened Will last March. On the menu: sleek decor and creative cuisine a stone’s throw from rue d’Aligre. A beautiful address!

William Pradeleix already boasts a fine CV. He has worked in some of the world’s finest establishments, including Saint Regis in Bora-Bora and La Mamounia in Marrakech. He also assisted Hélène Darroze at The Connaught in London. The cuisine served is influenced by William Pradeleix’s travels, particularly in Asia.
For starters, I choose a salt-seared salmon with a sesame condiment and green meat radish.
The menu is rather limited: no more than 5 choices for the main courses, for example. But that doesn’t make it any harder to decide: Carpaccio de Maigre, Citronnelle, Pièce de bœuf marinée or Cabillaud, Bockchoy shitaké et écume curry vert.
I finally opt for the dish of the day: a onglet with Japanese spinach. Perfect! Beautifully cooked.

A few terrace tables are available for sunny days.
The panna cotta infused with Thai basil, diced roasted pineapple, mango sorbet and translucent tuile of cardamom caramel is just to die for! Breaking the tile, we discover a tasty dessert. The fragrance of Thai basil is powerful.

A cuisine with tangy, colorful Asian flavors, which awaken every dish. A restaurant to discover as soon as possible!
