The Chablis appellation is the most important of the Chablis vineyards. Planted on hillsides on either side of the Serein river, on the famous Kimmeridgian soil, Chablis wines are the true representatives of the Chablis style. The terroir here brings freshness, minerality, finesse and complexity.
Made from 100% Chardonnay, La Chablisienne’s 2018 Chablis “Dame Nature” comes from a middle and upper Kimmeridgian soil of alternating limestone and marl with Exogyra virgula. The vines, around 20 years old and planted at a density of 5500 to 7500 vines/ha, are cultivated according to the principles of organic farming. The 2018 Chablis “Dame Nature” undergoes static cold settling before fermentation. Following alcoholic and malolactic fermentations in vats, it is aged on fine lees for 9 months in vats only. Chablis “Dame Nature” 2018 has a very pale gold color, and is a limpid, brilliant wine. Its initial nose is a blend of white flowers and white orchard fruit. On aeration, a touch of minerality adds a more complex note. The wine offers a beautiful vertical structure on the palate, with impressive minerality. The tasting ends with a long, brilliant finish.
