Mandarin Oriental, Paris presents its new Pastry Chef Adrien Bozzolo‘s Christmas log.
For his first Christmas creation at the Mandarin Oriental, Paris, Adrien Bozzolo set himself a double challenge: a recipe with no added sugar and a bold vertical design. Keen to create pastries that combine pleasure and well-being, Adrien created a recipe without using sucrose, thus sublimating the sugar naturally present in the ingredients. The rectangular cake, in the shape of a window pierced in a wall of white chocolate-covered freestone, is composed of an apple ginger cookie, a creamy yuzu, a granny apple brunoise, wrapped in a white chocolate and vanilla mousse.
A miniature Christmas tree in chocolate crumble completes this gourmet composition, and is revealed behind this tempting window that seems to come straight out of the most beautiful fairy tales. Hansel and Gretel couldn’t resist!

The Mandarin Oriental, Paris Yule Log is available as a limited edition
from December 11 to 25, 2017 only at the Cake Shop and on order 48 hours in advance by calling
01 70 98 74 00 for 78 euros (8 people).
An individual log will also be available for 15 euros on site and 8 euros to take away.
