MABEL is a new Parisian address created by Joseph Akhavan and his partner Samantha Sanford, ideally located in the Sentier district,
just a stone’s throw from the touristy rue Montorgueil and the gastronomic rue du Nil.
They give pride of place to their favorite products: cocktails and grilled cheese.

A high-flying Bartender and former head bartender at Mama Shelter and La Conserverie, Joseph Akhavan creates cocktails with original recipes at
the perfect balance, and offers an exceptional selection of Rhums.
From her childhood in New Jersey, Samantha Sanford has happy memories of gourmet breaks at her grandmother’s house, with creamy grilled cheese. It’s an American specialty that she likes to share with Parisians.

In this raw yet intimate setting, Samantha and Joseph are keen to share their passion for taste. They like to create an exchange with their customers and pay attention to each person’s palate. At MABEL, cocktail tasting should be experienced as an exceptional moment.
In contrast to cocktails, which need to be delicately prepared, grilled cheese, made in the USA, is an opulent and cool dish! It’s delicious
when well prepared, as at MABEL, where only the finest raw materials are used.
In its plain version, with sliced bread and melted cheese, it’s ideal for satisfying small appetites when the aperitif goes on at the bar…
Samantha and Joseph chose the name MABEL as a reference to Mabel Walker, Assistant U.S. Attorney General in the 1920s.
A major figure of Prohibition and the most powerful woman in the United States, she fought against speakeasies, even though, as a true epicurean,
she enjoyed frequenting these places in the evenings, once she had left her law enforcement outfit.

L‘artisan Bartender
Cocktail Bar MABEL, nestled in the back of 58 rue d’Aboukir, is the new landmark for cocktail lovers.
Joseph Akhavan, one of Paris’s finest bartenders, creates mixes for connoisseurs and neophytes alike.
The menu features creations that change regularly according to seasonal produce and Joseph’s inspiration. There are also references to shaker classics, reinvented with a twist… For example, when he decided to put the Classic Daiquiri on the menu: rum, lime and sugar, Joseph proposed a new taste experience with the Blockbuster Daiquiri. He replaces the sugar with cola syrup, puts the lime on the plancha to lightly toast it before squeezing it, and finishes by adding a dash of popcorn extract.

When he revisits the Treacle: Rum, apple juice, sugar and bitter, the variation is full-bodied. The base is the same, but the rum is infused with spices, the apple juice is married with Pommeau (a blend of apple juice and Calvados), the sugar is replaced by a homemade shrub made with rosé cider and mint, and the whole is drizzled with Absinthe and a few drops of Sherry for a complex balance.

Note: all syrups, cordials, shrubs, infusions and bitters are homemade from the finest ingredients sourced from handpicked suppliers such as Zoé Vanille, Maison Le Paulmier, Les Vergers Saint-Eustache and Bio Planète.
What’s more, at MABEL, every cocktail has a visual story. Dressing is as meticulous as the beverages themselves. A variety of glass designs and materials, some exclusive to MABEL, are used to create settings that awaken the senses. Tasting begins with sight, followed by smell, and ends with an explosion of flavors on the palate.

Discovering Rum
Joseph Akhavan is passionate about rum. For over six years now, he has been studying its often little-known subtleties, including a trip to Guatemala to learn about its production methods. As a result, he has set up the “Routes des Rhums” tasting offer, enabling visitors to familiarize themselves with the different varieties of Rum and their regions. The map highlights nine regions to be explored by tasting three rums. We discover that rums from Central America are made with cane honey, which gives them roundness and deliciousness; those from British Guyana offer a pleasant mellowness on the palate because they are made with Demerara, a sugar cooked to caramelize; as for the Rhums Agricoles, distilled using the method of the French Islands, based on cane juice, they are characterized by their aromatic power.

Straight from the USA, grilled cheese is the new “easy-to-eat” that’s seducing Europeans. Still a rarity in Paris, MABEL has taken up the challenge of making it as desirable as it is for Americans like Samantha, her friends and family, for whom the grilled cheese party is always a
good time.
Grilled cheese consists of two slices of bread toasted with butter and filled with melted cheese. This base is combined with a variety of ingredients. Depending on the season, it can be served with a salad or a hot or cold soup. The little forbidden gesture that we can’t resist… dipping your grilled cheese in soup!
MABEL offers six homemade recipes, including one vegetarian, and a Grilled Cheese du Jour, to eat in or take away. All recipes are made with fresh produce selected from the best suppliers: Philippe Conan of Aux Péchés Normands bakery makes the custom-made grain bread, the pork is ordered from Viandes du Châteauneuf, the Cheddar comes from an artisan cheesemaker in Ireland, the Vegetarian Pepperoni is supplied by Un Monde Vegan…
