Frustrated Parisians with a taste for the countryside and a springtime atmosphere will be delighted to know that Le Saut du Loup has undergone a metamorphosis, offering a menu that perfectly meets their needs. Under the leadership of Marc Meneau, the place takes on a whole new dimension.
The restaurant and its extension, the terrace, create an atmosphere conducive to escape and relaxation.
The menu put together by Marc Meneau and chef Jérôme Aubert makes it easy to get into the mood. Always an advocate of local, quality produce, the former has presented dishes that respect the original flavors of each ingredient. The result is a cuisine not based on overkill, but on subtle alliances that bring out the best in the various elements. A cuisine of pleasure, of the moment.
One starter is highly evocative of this approach, Le cœur de Laitue, huile d’olive citron et éclats de légumes. It will tempt the bold, lovers of nature and freshness.
Another dish, L’Assiette de sardines, ventrèche de thon, radis avec fane et beurre, reveals this commitment. An invitation to lightness of being.
There are five dishes to choose from, all of which encourage the same approach. For example, Le Dos de lieu noir sur étuvée de poireaux écrémés (Back of saithe on a stew of skimmed leeks) is an interesting dish. The fish’s flesh is firm yet soft. The leeks, cooked ‘al dente’, are astonishing. Their presence does not hinder this purist approach.
Pyrenean suckling lamb is accompanied by white coconuts. Both are ‘fed’ with a sauce. Its presence highlights the quality of the products and allows the taste buds to enjoy them in excellent conditions.
Dessert does not disappoint. Le Café gourmand, for example, offers a pleasing array of possibilities. Delicate cake, mini flan whose gelatinous texture contrasts with its decoration, a dome of hard caramel, the few strawberries refreshing to the palate, the macaron…
