Café de la Paix: Chinese breakfast.

The Intercontinental Paris Le Grand places China and its tourists at the forefront of its concerns. At a time when Paris is becoming decried by the Chinese authorities for its insecurity, the palace offers them a place of choice. With characteristic delicacy, the hotel is offering a Chinese breakfast. Following the example of their previous proposal, dedicated to Japanese guests, it offers a refined range of specific products.

Chef Christophe and his team have selected a number of dishes that will appeal to the palate of their guests. A delicate gesture of welcome, demonstrating a deep respect for Chinese culture. Dried silver fish rub shoulders with scallops, seaweed and thin slices of cebette. The various ingredients will evolve according to customer demand, a sort of “made-to-measure” service.

1 Did this Chinese breakfast concept meet a need or a demand from your customers?

Yes, really. We have a large Chinese clientele. They’re flourishing. Last weekend, we catered a banquet for 450 people. We also cater for weddings and other celebrations.

2- In the context of Fashion pastries, the establishment has already forged links with China. I’m thinking of the cooperation with Frankie Xie in October 2011.

Indeed, the experience was also interesting. Now we can venture into another sector, that of savoury.

3- You wanted to make a very precise adaptation to Chinese breakfast?

This was essential. Each customer is going to find his or her bearings during this first meal. Working with the Intercontinental China group and our Chinese customers, we targeted products that would appeal to every Chinese person. We were sensitive to different tastes, with certain provinces having their own preferences.

4- What did you find most interesting to develop?

Finally, I’d like to talk about product selection. The hardest part was listing them, identifying the most popular ones.

5- Tell us about drinks…

Tea, of course, has pride of place. We’re thinking of expanding our range, always in line with our customers’ wishes.

This summer, we’ll be serving iced tea…

6- Once you’ve identified your products, how do you select your suppliers? Can you source directly from China?

This was not possible. Delivery times were too long. We turned to intermediaries, based in France, with impressive stocks. These are stored in warehouses specifically reserved for Chinese raw materials.
These suppliers are very efficient, and very responsive. This explains why we can respond to special requests at very short notice.

7- All in all, you’ve put together a superb taste journey?

In a way, ..

There are a few specialties to savor with relish: all the shellfish and dried fish. Rehydrated in contact with a rice broth, they exude all their aromas – a delight! Add other ingredients, such as cebettes, fermented tofu marinated in soy sauce, and you’re on your way to discovering new flavors. Also consider Baozi, small steamed buns containing vegetables, meat, etc.
A few chopsticks will allow some to test their agility and awakening skills!

Alongside our Asian clientele, other lovers of fine food are also likely to come and try their taste buds.
