The strawberry-rhubarb combination, reminiscent of his early years in the family pastry shop in Colmar, inspired Pierre Hermé to invite the sunny, fruity note of passion fruit to the party. A springtime outfit for a play of flavors and textures featuring the happy marriage of strawberry, rhubarb and passion fruit. On a crunchy bed of Breton shortbread, the tangy note of strawberry rhubarb compote is enlivened by the intense aromas of mascarpone cream and crunchy passion fruit meringue. A perfect balance of tastes, with each flavour revealing itself in succession, harmoniously and distinctly, as the tasting progresses. A lovely Spring cake.

Céleste is reinvented in the form of a cheesecake, with a new interplay of flavors between passion fruit and strawberry-rhubarb, enhanced by contrasting textures. On a shortcrust pastry base, the softness of the passion fruit cheesecake, the wetness of the cookie soaked in the same aroma, the acidity of the strawberry-rhubarb compote and the frothiness of the light cream cheese superimpose harmoniously but distinctly, to better reveal the fruity, sunny taste of the tropical fruit.
