Jean-François Rouquette, Chef of Le Pur’ gourmet restaurant at PARK HYATT PARIS-VENDÔME earns his 4th toque at Gault & Millau 2013

In October, Jean-François Rouquette, Chef at Pur’, the gourmet restaurant at the Park Hyatt Paris-Vendôme, was awarded a 4th toque by Gault & Millau 2013.
Gault & Millau comments: “Jean-François Rouquette is the nitroglycerine chef… A few drops are all it takes for everything to explode! We knew him to be technical, consistent and dogged in his quest for true taste. When others were shaking the shaker and swelling the foam, Rouquette defended authentic texture, chewiness and pure product. He proves, with a simple féra in a hazelnut and almond crust (and an explosive little white turnip chutney), with a splendid sweetbread in seaweed butter with knives and periwinkles, or with squab, just as racy, in a horseradish emulsion, just how right he was…”.
Jean-François Rouquette, a native of Aveyron with a passion for gastronomy from an early age, began his career at Le Petit Riche before moving on to palace kitchens with Jean-Paul Bonin. He went on to work in such prestigious establishments as Le Grand Véfour, Le Martinez in Cannes and Le Taillevent. Christian Constant then offered him the chance to assist him at the Crillon. Then, at the age of 32, he took over “La Cantine des Gourmets”, Micheline Coat’s restaurant, where he was awarded a star. Finally, after a spell at Le Scribe, where he succeeded Yannick Alléno, Jean-François Rouquette joined the Park Hyatt Paris-Vendôme.
