From now until November 15, the House of FAUCHON is celebrating its famous French-style pralines: a whole history and a good program in perspective.
So, in this early autumn, to bring you a little comfort, Luxsure went to Place de la Madeleine to tell you more.
Welcomed by the pastry chef, Fabien Rouillard, we had the chance to taste several praline-based desserts (cake, mini-eclair, macaroon, and chocolates of course).
He told us how recipe ideas are born: a florist who makes you smell a rose and then a lemon, a morning when you spread orange jam on walnut bread, a walk in the forest where the scent of wood mingles with the cinnamon of the mulled wine waiting for you at the chalet…
Sometimes, memories come back to him and inspire him to make a combination, like an encounter. That’s how the magic of patisserie works, especially when you have the talent and quality standards of a house like Fauchon.
In a break with the praline boxes we’re used to seeing at Fauchon, the team has come up with elegant rectangular formats. Each offers an assortment of 5 recipes (including 2 new ones) blending walnuts/hazelnuts or almonds, and chocolate from 40 to 70%.
“Developed in partnership with Pascal Caffet, Meilleur Ouvrier de France and FAUCHON Talent, these pralines are made using traditional techniques.” And of course in the company’s workshops in France, hence the nod to the collection’s name: MADE IN F.
Obviously, the ingredients contribute to the refinement of these sweets; at Fauchon, you’ll only find exceptional products like Piedmont hazelnuts, Valencia almonds, chocolates from Venezuela and the Ivory Coast…
Freshness, aromas and flavors are captured in these pralines, which can be shared from a few grams (each one makes around ten) to a whole kilo. La Maison has in fact created a “Piano case” of 100 pralines, which will set you back €170 per kilo 🙂
For Two ideal gift sets (value for money) are sold on the Maison website for between €29 and €41 (excluding postage):
With a few rare exceptions (people allergic to oilseeds, etc.), this type of pretty present filled with excellent pralines is sure to delight those who receive it!
And for other formats and live tastings, gourmets (like me) can meet up at the FAUCHON boutique at snack time, for example.
Don’t miss the “L’Éclat” cake(below in the shape of PacMan), also available as an individual slice. When the crunch of hazelnut and the sweetness of praline meet the delicate acidity of blood orange… um, you can’t write it down: you have to taste it.
