The Noema restaurant in Mykonos, owned by Richard Caring, has recently been in the news for its innovative approach to sustainable gastronomy. Serving gourmet dishes of modern Greek cuisine, the restaurant is at the forefront of reducing food waste by throwing absolutely nothing away.

Exceptional culinary director Athinagoras Kostakos is the architect of a new style of Cycladic cuisine, and has created an innovative and creative zero waste menu for the first time. The dishes served at Noema are designed to reuse leftover food, creating a unique gastronomic experience.

Almost every concocted dish contains the leftovers of another. Calamarata Mavro is derived from uneaten Cycladic squid, Smoked Taramas uses leftover sourdough bread, excess beet from salad finds a new home in the Kyano & Gaia cocktail, unused coffee from the previous day cleverly forms the key ingredient in Greek Carob Tiramisu and uneaten beef rib carpaccio and beef tartare find their way into the slow-roasted Dolmades dish, to name but a few.

This innovative approach to sustainable gastronomy is the first of its kind in Mykonos, a popular tourist destination in Greece. As a result, Noema guests can enjoy a world-class culinary experience while helping to reduce food waste.

Richard Caring, the owner of Noema, is a renowned restaurateur, having created such renowned establishments as The Ivy, Annabel’s, Scott’s and Sexy Fish. Noema has been designed to offer an authentic dining experience that reflects the generous and carefree spirit of the Cyclades. Caring founded International Clothing Designs, a company that supplied Hong Kong-made clothing to British retailers, before diversifying into the restaurant and nightlife industry. He is now Chairman of Caprice Holdings, which owns and operates The Ivy restaurant chain.

Noema is a shining example of Caring’s passion for innovation and sustainability, which have become key themes in modern catering. According to the Sunday Times Rich List 2021, Caring’s net worth is estimated at £1.005 billion.

The restaurant will open its doors for the new season on Friday May 19 in the hidden historic streets of Mykonos town.
