Géosmine: the restaurant that combines creativity and local produce
Located in the 11th arrondissement of Paris, Géosmine is a singular project that brings together more than a dozen passionate artisans. Chef Maxime Bouttier has brought together a team of producers, fishermen and winemakers to offer authentic, creative cuisine, where the product is king.
In a decor that’s both raw and warm, Géosmine welcomes guests in a singular atmosphere, where the elements come to life and respond to each other. The concrete bar imagined by the chef and designed by Sonia Lafage, the lighting fixtures designed by the DCW agency, the raw table tops at the back of the wagon and the solid walnut chairs give the space a country-house feel. Upstairs, the kitchen, entirely imagined by the chef, opens onto the second dining room, where light oak parquet contrasts with stainless steel and concrete tiles.

On the plate, Maxime Bouttier offers a precise, well-chiselled menu, where the terroir evolves with the seasons, new arrivals and the discoveries of those who accompany him. To cut out the middleman and promote short circuits, the chef buys from trusted local producers, such as Lola Perier of Jardin Etourdi, based in the Yvelines, or Boucheries Nivernaises, in the heart of Paris. As for the wines, they travel between Greece, Spain, Austria, Germany and Italy, with 90% of them natural or organic/biodynamic.
Tableware is not to be outdone, with ceramic plates handmade by three Ile-de-France ceramists, each with their own specialty, and knives by Charles Canon, designed in his Pas-de-Calais workshop on a former slag heap. For glassware, the chef relies on the unique expertise of Mark Thomas in Austria, who mouth-blows the very graphic glasses and decanters that give body to the cellar’s many references.
At Géosmine, the chef’s creativity, combined with his technique, offers a new vision of Parisian gastronomy. More than a restaurant, Géosmine is a project that unites people with a passion for the land, sea and wine, to offer a global experience to its customers, a shared vision between cuisine, service, sommellerie and pastry-making.
