Serge Michaud prides himself on bringing thrilling sensations to his customers. In his boutique at 26 Allée de Tourny in Bordeaux, temptation is king. Since his arrival in 1997, he has been captivating gourmets’ taste buds. With delicacy, he has revived the quintessence of this company, founded in 1826.
As soon as you enter, you’re greeted by the sweet smell of chocolate. Intrigued, the aesthete will be enchanted by the sight of the delicate ‘bonbons’ decorating the windows. The black diamond is almost the ultimate temptation.
This truffle is atypical. This dark chocolate ganache, combined with grape must impregnated with fine Bordeaux wine, has been coated with a dark chocolate couverture. The whole was subtly coated with granulated sugar. Alchemically, the pigments in the grape must reach the surface, giving the delicacy an extraordinarily superb violet color.
Cardinal, a ganache with grapes macerated in Bordeaux wines, is a tribute to local heritage.
The Bordeaux region offers another version of the ganache, with grapes impregnated with fine Bordeaux wine.
A little further on, a pure malt whisky square evokes the interesting alliances between chocolate and the precious spirit.
The Trios, a set of three roasted hazelnuts coated in dark chocolate, provides a pleasant distraction for the taste buds.
The Guinette reveals some happy surprises. A guine or morello cherry has been immersed in kirsch for several months.
Then it was bathed in cocoa fondant. The resulting candy was placed on a bed of dark chocolate flakes.
