The excellence of duck foie gras marries the rarity of ice wine, the heart of Norwegian salmon fillet is adorned with splinters of lime vodka, the Comté cheese is astonishing in its PDO version – 27 months of maturing – with the crunch of its natural crystallization, and the sculptural log looks like white chocolate crystals…
Foie Gras

An historic product of the House since its creation in 1886, foie gras is the reflection of French food luxury on the international stage. Even today, FAUCHON takes a fresh, inspired look at this dish, long a symbol of the terroir. Its noble, fatty texture captures flavors perfectly, opening the way to infinite creative possibilities.
The selection of foie gras is the first mark of the talent of FAUCHON experts. It is subjected to rigorous quality and exception requirements, illustrated by species (goose or duck), origin (Landes, Vendée…), weight (between 450 and 550g for duck and between 550 and 650g for goose) and texture. All are selected, denervated and seasoned, one by one, by hand. All are “Made in F” foies gras -Made in FAUCHON, Made in France-.
“A beautiful ivory color, supple under the thumb and firm at the same time, flawless… and the taste of a recipe that you imagine in your mouth before you create it…” are the words of Jean-Pierre Clément, Chef de Cuisine and scout for exceptional products at FAUCHON since 1976.
Duck Foie Gras with Ice Wine
For this Cristal Christmas, Jean-Pierre Clément has created a melting duck foie gras, enhanced by a rare wine: ice wine. The over-ripe grapes, from a late-harvest Gewurztraminer variety, are picked frozen and pressed the same night to retain the ice crystals with the pulp. This wine brings finesse, richness and aromatic persistence to whole duck foie gras for a very subtle match.

Patisserie has been one of the brand’s favorite territories since 1895. From emblematic eclairs to pastry sculptures that evolve with the seasons, the brand’s pastry chefs invent new expressions of dessert, revisiting traditional cakes and entremets with originality and creativity.

Bûche Cristal
This immaculate, rock-cut entremets has all the hallmarks of a real crystal.
From top to bottom, it’s made of a fine, crisp white chocolate shell, enclosing a creamy
blackcurrant mousse, quince compote and crunchy dark chocolate cookie chips.
