Maison Hugo Desnoyer and Hennessy have announced their partnership for a new pairing experience that highlights the exceptional quality of Hugo Desnoyer’s Corrèze veal tartare and Hennessy X.O. cognac. This is the third time the two houses have worked together, sharing common values of passing on know-how. Hugo Desnoyer’s selection of choice cuts is combined with the creations of Renaud Fillioux de Gironde, master blender at Hennessy.
Veal tartare is one of Hugo Desnoyer’s signature products. The master butcher meticulously works the meat to extract its fine, dense texture, which blends perfectly with the woody, spicy aromas of Hennessy X.O. cognac. The cognac’s amber color and mahogany highlights add a richness of flavor to the veal’s delicacy.
Hennessy X.O cognac is the result of a careful selection of deep, powerful eaux-de-vie, distinguished by their character and ability to balance each other. This robust, rich and remarkably long-lasting cognac has subtle spicy and woody notes.
Pairing MEAT COGNAC* will be available à la carte at La Table d’Hugo Desnoyer from May 15 to November 15, 2023. This tasty meat and cognac pairing is priced at €45.
Hennessy X.O cognac is also available for sale at the butcher’s. Corrèze veal tartar is featured in Hugo Desnoyer’s latest cookbook, « Recettes de viandes d’un partisan boucher », available from First Editions for €35.
Maison Hugo Desnoyer is located at 28 rue du Docteur Blanche, 75016 Paris, and is open Tuesday to Saturday for lunch and Thursday evenings for dinner.
