Rye whisky, a grain of character long associated with North American distilleries, finds in France an unexpected ground for experimentation. Founded by Antoine Gravouil, Olivier Carsoule, Éric Lafon and Jean Dujardin, Aventure presents itself as the first French distillery dedicated to rye whisky. It is now unveiling Nomad, an experimental and ephemeral collection of single casks produced in limited, numbered quantities, conceived as an invitation to travel through the many influences of ageing on rye.

Three casks, three geographies of taste

The Nomad collection does not play on the diversity of grains but on that of casks. Each cuvée starts from a 100% French organic rye distillate, aged entirely in a carefully selected first-fill cask. The Single Cask Ex Mezcal matured for 52 months in a former Mezcal Koch cask, from Oaxaca, Mexico: the nose reveals vegetal and herbaceous notes, while the palate marries agave smoke and the cereal freshness of rye in a long, taut finish. It is offered in 165 bottles at 48.2% ABV, at a price of 109 euros.

The Single Cask Ex Rhum, aged 36 months in a former rum cask from the urban Bordeaux Distilling Co., takes a more indulgent direction, with aromas of vanilla and caramel on the nose, a full palate with slightly woody and spicy notes, and a powerful, lingering finish. It comprises 244 bottles at 51.3% ABV, sold at 89 euros. The Single Cask Ex Imperial Stout, finally, spent 37 months in a former Imperial Stout cask from the Pophin brewery: cocoa and freshly roasted coffee on the nose, dark chocolate, dark fruit and toasted grain on the palate, for a complex finish. It is available in 312 bottles at 46.4% ABV, at a price of 79 euros.

Transparency as a signature

For each reference, Aventure states the exact origin of the cask as well as the precise length of maturation, judged optimal by the distillery within its urban warehouse in Bordeaux. This transparency, rare in a sector where the origin of finishing casks often remains vague, is part of a declared approach of research and education around rye. Produced in limited, numbered and non-renewed series, the Nomad cuvées are intended to evolve each year according to the distillery’s experiments, rather than settle into a permanent range.

This editorial choice, turning each cask into a singular object rather than a variation on a fixed recipe, places Aventure in a particular category of the French spirits landscape: that of houses that build their identity not on the reproducibility of a taste, but on the accumulation of cask stories. At a time when French whisky is still seeking to define its own grammar, far from Scottish or American codes, Nomad bets that the uncertainty of ageing, rather than its total mastery, can become an argument for desirability.

It remains to be seen whether this logic of a living collection, renewed each year without ever repeating itself, will win the loyalty of an audience of enthusiasts used to finding, from one bottle to the next, the constant signature of a house. With Nomad, Aventure bets on the opposite: giving each cask the right to tell its own story, even if it never tells it twice.
