The estate also emphasizes the complete absence of animal-based inputs in the winemaking process, with clarification carried out using mineral and plant-based fining agents.     <\/p>\n\n<p class=\"wp-block-paragraph\">What makes Kalahari unique is, above all, its aging process. For twelve months, the wine rests on fine lees in Burgundy barrels and demi-muids. This extended aging profoundly alters the expression of the terroir. The aging process does not seek to impose an oaky character; rather, it serves to reveal the wine\u2019s texture. The lees impart volume, density, and a tactile sensation that sets the wine apart from the standards typically associated with southern whites.   <\/p>\n\n<p class=\"wp-block-paragraph\">The description mentions a golden-yellow color with silvery highlights, along with notes of pear, peach, and white pepper. These tasting notes are less interesting than the structure described: a full-bodied palate built around texture and balance.
