The 2021 vintage was anything but a walk in the park.<\/p>\n\n

In Bordeaux, the year began with a mild, rainy winter before a cold spring slowed the vines\u2019 development. The April frost caused concern throughout the vineyard. In Labarde, however, Ch\u00e2teau Dauzac\u2019s vineyards benefited from a quiet ally: their proximity to the Gironde estuary, whose thermal inertia limited the effects of the most severe cold spells. <\/p>\n\n

The rest of the season required constant vigilance. Rainfall in June was 127% above average, while the cool, damp summer exacerbated the threat of downy mildew. Veraison was delayed due to a shortage of sunlight estimated at nearly twenty percent. In a context where many estates are seeking to preserve their harvest potential, the issue is no longer one of concentration but of ripeness. <\/p>\n\n

It is precisely within this context that Aurore de Dauzac must be understood.<\/p>\n\n

This vintage comes from a selection of plots located on a geological layer of fine, sandy gravel that enhances the expression of Cabernet Sauvignon. The blend consists of 62% Cabernet Sauvignon, complemented by 37% Merlot and 1% Petit Verdot. <\/p>\n\n

The technical choices reflect a focus on delicacy rather than extraction. The grapes are harvested by hand into small crates, with a double sorting process before and after destemming. Winemaking takes place in a gravity-fed winery, a system designed to minimize mechanical handling and preserve the integrity of the berries. Fermentation occurs in temperature-controlled wooden and stainless steel tanks, maintained at 28 \u00b0C. <\/p>\n\n

The aging process follows this same principle of balance. For twelve months, 45% of the wine is aged in French oak barrels\u2014only 20% of which are new\u2014and 55% in large oak casks. This ratio is telling: the large oak casks provide slow oxygenation without imposing a dominant oaky character. <\/p>\n\n

On the palate, Dauzac evokes crisp red fruits, a light floral character, and a supple structure. But the appeal of the 2021 Aurore lies less in this aromatic description than in what it reveals about contemporary Bordeaux. For several decades, Bordeaux\u2019s prestige has often been built on richness, density, and concentration. The 2021 vintage evokes another tradition: that of wines built around freshness, length, and precision. <\/p>\n\n

The planting density is 10,000 vines per hectare, a level typical of the great M\u00e9doc terroirs. The vines, which are on average thirty-five to forty years old, are trained using the double Guyot method, with debudding and organic fertilization. <\/p>\n\n

Aurore 2021 can be enjoyed after a few years in the bottle but has an anticipated aging potential of fifteen to twenty years. This prospect serves as a reminder that years considered difficult sometimes produce the most revealing wines. They compel the winemaker to focus less on power and more on precision in their craft. <\/p>\n\n
