Yet this region\u2019s winemaking history is not written solely in red. For several decades now, certain wineries have been exploring another facet of these landscapes of garrigue and white stones: that of Mediterranean white wines.  <\/p>\n\n<p class=\"wp-block-paragraph\">The white wine from Ch\u00e2teau \u00c9tang des Colombes belongs to this unassuming yet essential family.<\/p>\n\n<p class=\"wp-block-paragraph\">This wine is a blend of Grenache Blanc, Macabeu, and Bourboulenc\u2014three grape varieties deeply rooted in the winemaking heritage of southern France. Grenache Blanc generally provides structure and body. Macabeu contributes to the overall balance, while Bourboulenc helps preserve the wine\u2019s liveliness and freshness\u2014two qualities that are particularly sought after in a Mediterranean climate.    <\/p>\n\n<p class=\"wp-block-paragraph\">The wine\u2019s identity is also rooted in its terroir. The vines are planted in stony, clay-limestone soils. This combination plays a decisive role in the balance of the grapes: the clay retains moisture, while the limestone helps regulate the vines\u2019 vigor and promotes the expression of profiles that are often more taut and briny.    <\/p>\n\n<p class=\"wp-block-paragraph\">The winemaking process is designed to preserve the fruit\u2019s character. A brief skin contact precedes pressing and cold settling. Fermentation then takes place under temperature-controlled conditions for approximately eleven days. This profile meets contemporary expectations for southern white wines: preserving the sunny character of the climate without sacrificing balance.    <\/p>\n\n<p class=\"wp-block-paragraph\">The suggested pairing with seafood, grilled fish, and shellfish also serves as a reminder of a fact that is often overlooked: the great white wines of the Mediterranean are, first and foremost, coastal wines. Their primary purpose is not to showcase power but to complement seafood dishes where freshness and saltiness play a central role.   <\/p>\n\n<p class=\"wp-block-paragraph\">In a wine-growing region where the Corbi\u00e8res are still primarily associated with red wines, this cuv\u00e9e serves as a reminder that the future of the Languedoc also lies in the rediscovery of its historic white grape varieties.
