Some whiskies are born out of a strategy, a market analysis, or a coldly calculated opportunity. And then there are those that begin with a friendship. Aventure belongs to the latter category: projects that already tell a story even before they\u2019re poured into a glass. In Bordeaux, in the Bacalan neighborhood, Antoine, Olivier, \u00c9ric, and Jean have chosen to tackle one of the most challenging categories of dark spirits: rye whiskey. <\/p>\n\n

Their ambition is anything but trivial. Aventure bills itself as France\u2019s first distillery dedicated to rye whiskey\u2014a rye spirit long associated with American history, speakeasies, classic cocktails, and palates that favor dry, spicy, and crisp profiles. While France has primarily built its whiskey culture around barley, Aventure is taking a different path: that of organic French rye, which is difficult to distill and tricky to master, but capable of delivering a lively, bold, and unique aromatic profile. <\/p>\n\n

The story begins in London, over dinners, conversations, and drinks shared among friends. Antoine, Olivier, and \u00c9ric discovered they shared a passion for whiskey\u2014and more specifically, for rye whiskeys. The idea gradually took shape: to create a bold, authentic French rye whiskey, rooted in Bordeaux, not far from Soulac-sur-Mer, a place close to their hearts and family ties. Jean then joined the adventure, bringing to this circle of friends another perspective on rye whiskey, born from a discovery he made abroad. The project then took its final shape: a distillery, three cuv\u00e9es, an obsession with quality, and the rather rare conviction that a spirit can be at once technical, collaborative, and deeply human. <\/p>\n\n

The choice of rye provides the backbone of the project. Rare in France for this purpose, it is sourced in Savoie through organic channels, in partnership with artisan maltsters. But rye is not a docile grain. Its density and viscosity make brewing complex, almost unruly. The wort becomes difficult, if not impossible, to filter. Aventure turns this constraint into a deliberate choice: the mash is prepared on-site, without outsourcing, to ensure total control. Each recipe gives rise to a specific whiskey. One mash, one whiskey. A simple, almost radical way to preserve the aromatic identity of each batch. <\/p>\n\n

At the heart of the distillery, the equipment reflects this ambition. Aventure uses a 750-liter hybrid copper still, custom-designed for grain distillation, with the grain still present in the mash. Heated by a steam jacket and equipped with internal agitators, it prevents the rye from clumping during heating. The two-stage distillation process\u2014first in a pot still, then in a rectification column\u2014preserves the richness of the grain while refining the distillate. This approach gives Aventure rye its dense body, full-bodied texture, and bold, unmistakable grain character. <\/p>\n\n

The aging location also plays a decisive role. Housed in a raw, un-air-conditioned warehouse, the Bacalan urban cellar takes advantage of the wide temperature swings. Here, the wood ages quickly; time seems to condense. Evaporation rates are spectacular: up to 20% \u201cangels\u2019 share\u201d after three years, and 30% for certain batches after five years. Far from being mere scenery, the cellar becomes a catalyst for identity. It imposes its constraints, but in return offers powerful, expressive profiles, shaped by air, heat, cold, and wood. <\/p>\n\n

The lineup is centered around three cuv\u00e9es, each representing a different approach to French-style rye.<\/p>\n\n

Aventure No. 1, French Oak, is the original expression. Crafted from three 100% organic French grains\u201461.7% rye, 37% barley, and 1.3% buckwheat\u2014it pays a subtle tribute to buckwheat and a certain French grain heritage. Aged for at least four years in new, medium-toasted French oak barrels, it is bottled at 43%. Its golden color hints at a malty, rich nose, with notes of honey, vanilla, and ripe peach. The palate is full-bodied and enveloping, with rye spices and tannins that add structure. Suggested retail price: \u20ac59 for 70 cl. <\/p>\n\n

Adventure No. 2, American Oak, has a more transatlantic character. Made from 80% malted rye and 20% barley, both sourced from organic French farms, it is aged for three years in new, heavily charred American oak barrels, in the spirit of \u201cHeavy Char.\u201d Bottled at 47%, it boasts an amber color with coppery highlights and a nose of melted caramel, cocoa, and toasted grains. On the palate, the rounded, woody character meets the mild spices of rye, with a long, smooth finish marked by warm bread, caramel, and vanilla spices. Suggested retail price: \u20ac69 for 70 cl. <\/p>\n\n

Adventure No. 3, Double Cask, follows the most traditional Bordeaux-style approach. Derived from the original vintage, it blends French organic rye, barley, and buckwheat, then undergoes double aging: three years in new French oak barrels, followed by at least two years in Bordeaux Grand Cru barrels. Bottled at 43%, this five-year-old cuv\u00e9e features a mahogany color and a complex nose blending the warmth of grains, dried fruits, leather, and slightly oxidative notes. The palate is dense and textured, with notes of nuts, currants, and fine oak. Suggested retail price: \u20ac79 for 70 cl. <\/p>\n\n

This trilogy speaks volumes about Aventure\u2019s ambition. No. 1 weaves rye into the fabric of French tradition. No. 2 embraces its American heritage. No. 3 builds a bridge to the Bordeaux vineyards, as if the whiskey were seeking guidance from the wine. All three expressions are available at select wine shops and on the brand\u2019s official website. <\/p>\n\n

Rye, by its very nature, is not a whiskey for everyone. It has spirit, character, and sometimes a touch of sass. It appeals to fans of classic cocktails\u2014Manhattan, Old Fashioned, Sazerac, Vieux Carr\u00e9\u2014but it also deserves to be sipped neat, to appreciate the interplay between grain, wood, and spices. Aventure understands this perfectly: its whiskeys aren\u2019t just meant for the shaker. They embody a French take on rye\u2014more artisanal than showy, more sincere than spectacular. <\/p>\n\n

In a landscape where French spirits are increasingly seeking to carve out a niche beyond the expected traditional categories, Aventure offers a genuine alternative: neither an American knockoff nor a marketing gimmick.
