A portion of annual sales is systematically reinvested in space, equipment and services. This is not a contractual clause – it’s a logic of economic survival disguised as a culture of continuous improvement. <\/p>\n\n The data confirm this dynamic. According to the study Les Tendances de l’H\u00f4tellerie 2026 by In Extenso Tourisme, Culture & H\u00f4tellerie, the average annual RevPAR growth rate for upscale and luxury establishments has reached +6.5% between 2019 and 2025, compared with +3.2% for the mid-range segment. Palaces represent the highest extraction of this performance. In 2024, their average occupancy rate stood at 56% – up 3.2 points – with a notable acceleration in regional establishments excluding Riviera and Courchevel (+4.2%), according to RYDGE Hospitality’s Palaces Observatory. <\/p>\n\n Another indicator sheds light on the quality of this clientele: the average length of stay in the Palaces is 3.9 days, compared with 1.8 days for the French hotel sector as a whole (INSEE, 2024). This difference of 2.1 days is no mere detail – it reflects a deep economic commitment to the region, a multiplier effect that irrigates the entire local tourism economy. 83% of the clientele at these establishments is international, including 30% from North America. <\/p>\n\n What gastronomy reveals<\/strong><\/p>\n\n The table is the least misleading marker of a Palace’s standing. The thirty-three distinguished establishments alone are home to seven Michelin-starred restaurants – out of the thirty currently in France. That’s a quarter of the Michelin stars in a group of thirty-three addresses. This ratio is less an indicator of prestige than of a business model: gastronomy functions as a cultural infrastructure, not as an ancillary service. <\/p>\n\n The Commission that examines the applications includes among its criteria “the excellence of the restaurant and bar” on the same level as the architecture of the building, the location or the personalization of the service. Its members – experts in luxury travel, architecture, the media and gastronomy – work on a pro bono basis, appointed by the Minister by order of December 3, 2024. <\/p>\n\n Towards an exportable model?<\/strong><\/p>\n\n The French uniqueness lies in the architecture of its procedure: on the one hand, objective eligibility criteria (5-star rating, minimum surface area of 26 m\u00b2 per room, presence of suites, concierge service, multilingual staff, spa, swimming pool); on the other, qualitative criteria subject to assessment – “the legend, history and personality of the establishment”, “its uniqueness”. It’s to understand why six new entrants have chosen to submit to a scheme they know will be valid for three years – and that renewal will not be automatic. <\/p>\n\n The four-act procedure<\/strong><\/p>\n\n The awarding of the Palace distinction follows a two-stage protocol. Atout France first examines the conditions of eligibility: 5-star classification, start of business at least 24 months ago (or 12 months after total refurbishment), rooms with a minimum surface area of 26 m\u00b2, and all the reinforced criteria of the 5-star classification. Candidates declared eligible are then visited by two members of the Palace Commission, and auditioned by the entire jury. The Commission deliberates, then forwards its recommendations to the Minister of Tourism, who awards the distinction – or not.
