At Les Riceys, Pinot Noir doesn’t always foam. It infuses, it macerates, it remains silent. In this southern part of Champagne, still wine persists as an active memory, carried here by Domaine Alexandre Bonnet through two interpretations of the 2022 vintage. <\/em><\/p>\n\n

To understand what’s going on at Les Riceys, you have to leave behind the reflexive image of effervescent champagne. On these steep hillsides where Kimmeridgian limestone is mixed with slightly ferruginous marl, Pinot Noir is not looking for the tension of bubbles, but that of the soil. The altitude – around 250 meters – and the south-facing aspect give the vineyard a paradoxical climate: northern in latitude, solar in orientation. <\/p>\n\n

Domaine Alexandre Bonnet is part of this geography without correcting it. It translates it. <\/p>\n\n

The 2022 red is based on a clear-cut technical decision: whole harvest, gravity-fed vatting and extraction by infusion<\/strong> for about a week.
Here, there’s no quest for power through intensive pumping-over or mechanical extraction. The juice is built up by slow diffusion, leaving the grape skin to transmit tannins and pigments without rupture. Malolactic fermentation takes place naturally, sulfiting is kept to a minimum, and most of the wine is aged in second-hand barrels before two years’ rest in bottle. <\/p>\n\n

This protocol produces a structured but not demonstrative substance: fine tannins, stretched texture, acidic tension maintained. The wine can be served slightly chilled, a sign of balance in which the alcohol (12.89%) does not dominate the structure. <\/p>\n\n

At the same time, the 2022 white adopts an opposite but complementary logic: Pinot Noir vinified as a white wine<\/strong>, complemented by a portion of Chardonnay, with partial barrel ageing.
The grape variety, stripped of its color charge, becomes a vector of texture and tension. Chardonnay acts as an architectural corrector, bringing a more vertical reading. The whole is built around a saline signature directly linked to Kimmeridgian limestone. <\/p>\n\n

This red\/white diptych reveals less a range than a system: that of a Pinot Noir capable of changing register without leaving its origins.<\/p>\n\n

  • Cultivation: agroecological practices, no herbicides or insecticides, HVE and VDC certifications since 2015 <\/li>\n\n\n\n

  • Harvesting: exclusively by hand, sorted on the vine<\/li>\n\n\n\n
  • 2022 red production: 5216 bottles, 113 magnums <\/li>\n<\/ul>\n\n

    Ros\u00e9 des Riceys 2022, a separate product, extends this infusion logic. A three-day semi-carbonic maceration, including partial crushing by foot, organizes the circulation of juice without brutality.
    The wine is thus situated in an interstice: neither a technical ros\u00e9, nor a light red, but an intermediate form historically rooted in the region.<\/p>\n\n

    This positioning sheds light on a wider phenomenon: Champagne is rediscovering its still wines at a time when the global market is looking for less standardized expressions<\/strong>. Where bubbles impose a homogeneous signature, coteaux champenois reintroduce the variability of place. <\/p>\n\n

    Domaine Alexandre Bonnet is not proposing an alternative to champagne. It reminds us that champagne has never been the only story possible. <\/p>\n\n
