\"CUVEE<\/a>In honor of the warm weather, De Sousa has created a ros\u00e9 champagne that draws on the expertise of a family that has elevated champagne to an art form.<\/p>\n

A blend of Chardonnay (90%) and Pinot Noir (10%), Cuv\u00e9e des Caudalies Ros\u00e9 benefits from a particularly careful vinification process: the Chardonnay is placed in small 2-8 wine barrels for six months, during which it is regularly stirred to give it all its roundness. As for the Pinot Noir, it spends a year in 5-wine barrels, where it gains its fine structure. <\/p>\n

After “prise de mousse”, the wines remain on laths for five years. In keeping with tradition, De Sousa performs regular “poignettage” (stirring of the bottles to re-suspend the lees). To finish perfecting themselves, the bottles will rest another year in the cellar before being offered to connoisseurs and enlightened amateurs. <\/p>\n

Then it’s time to taste: under the delicate salmon-pink color, the many bubbles rise up the sides of the flute to form a light mousse. The fragrance of wood and vanilla awakens the sense of smell, before giving way to the taste of red berries. <\/p>\n

An exceptional ros\u00e9 champagne whose connoisseurs will appreciate its famous “caudalies” (the unit for measuring a wine’s length in the mouth) when served chilled as an aperitif or with fish, shellfish or white meats.<\/p>\n
