A unique experience, to discover the finest gastronomic products from this beautiful region in north-western Japan, just two hours by shinkansen from Tokyo. Kinas\u00e9, as it is called, means “welcome” in the Niigata dialect, and reflects the spirit of conviviality, authenticity and a typically Japanese sense of welcome. This boutique, with its simple, authentic concept that expresses the Japanese “Wa” touch, was designed by architect Eloise Bosredon, who has succeeded in highlighting the sakes, rice and other typically Japanese flavors presented here. <\/p>\n

Dedicated to the finest gastronomic products from the Niigata region, this multi-faceted venue is a true invitation to travel. Right from the entrance, hospitality is the order of the day, with the famous “Irasshai”, the expression used to welcome customers into a Japanese boutique. At Kinas\u00e9, the idea is to convey this unique Japanese culture by uttering this simple word, so rich in meaning. Then, the experience continues with the discovery of a rigorous selection of Niigata’s finest sakes, an opportunity to discover this range of little-known flavours, which can be tasted on the premises or taken away. Kinas\u00e9, a place rich in EXPERIENCE… In Niigata, a mountainous region facing the ocean, the secret of sake can be summed up in a single word: snow. This region is renowned for the high quality of its rice, of course, but also for its pure water. This fresh mountain water, this unique rice and these artisan brewers make Niigata the best sake producer in the world. You’ll also be able to buy aperitif cookies and discover these small sake glasses for a better tasting experience. <\/p>\n
In the center, a window display will showcase Niigata handicrafts such as cutlery and chopping boards… It will also be used for workshops and events organized by the boutique. To the right, a wall presents a selection of Niigata’s finest rice, the exceptional quality of which produces these refined sakes. These are accompanied here by miso soups and Niigata chillies, as well as accessories such as hangiri, the large wooden bowls, and the lacquered or bamboo spoons used for serving. Finally, a lounge area seating 6 to 8 invites you to stay and sample the specialties. It’s the perfect place to enjoy a cup of tea or learn how to taste sake. <\/p>\n

Typical Niigata sake This junmai ginjo is made with Takane Nishiki, one of Niigata’s 6 premium sake rice varieties. This sake is representative of Niigata sake, and in the style of the Taiyo house. It is produced using only rice, water and koji. The rice used must be polished to at least 60% of its original size, for a powerful taste that is both pure and gives a good idea of the complexity this type of sake has to offer.
