<\/a><\/p>\nMeticulous selection<\/strong>: At the origin of each rum in the collection is a meticulous selection of high-quality sugar cane, which is then pressed to obtain the molasses. After a precise assessment of their sugar content and flavors, only the best-quality molasses is retained and fermented for the different blends. <\/p>\n Fermentation <\/strong>: Bacardi’s signature yeast transforms the sugars in molasses into alcohol. It lays the foundations for the unique flavor and aromatic characteristics of FACUNDO rums. That’s why this crucial stage in the development of each rum takes place under the watchful eye of a master blender. <\/p>\n Parallel distillation<\/strong>: In keeping with the Bacardi family’s eight-generation rum-making tradition, the master blenders follow the parallel distillation process perfected by Don Facundo Bacardi Masso himself. This process enables them to masterfully craft rums with specific flavors and aromas, ranging from raw and robust to subtly sweet. <\/p>\n Tropical aging: <\/strong>Facundo Collection rums are aged in the tropics, where sun, sea and flamb\u00e9ed oak barrels combine to confer an unrivalled personality. Each rum is traditionally aged in new white oak casks, hand-selected and then toasted. The casks are never moved during aging, and the volume of rum that evaporates during this period is not replaced by younger spirits – an exception in the rum-making world. Each barrel is left untouched, so that the wood, the hot tropical sun and the sea air can work together, without interruption, to create a flavor full of character, complexity and unparalleled richness. <\/p>\n The tropical climate favors the accelerated development of flavors and aromas, as well as the overall maturation of the rum. However, the counterpart to this remarkable interaction is accelerated evaporation. Evaporation losses can reach 6 to 10% per year. As a result, the oldest rums aged in the tropics are exceptionally rare – after 23 years of ageing, barely 5% of the original volume remains. <\/p>\n The FACUNDO collection of rums is the expression of the unique savoir-faire of Ron’s Maestro Manny Oliver, who was entrusted with the mission of paying tribute to Don Facundo Bacardi Masso.<\/p>\n Finishing: <\/strong>in this very special process, the master blender selects the barrels in which to age the rum, one by one. This meticulous selection takes into account the complementary aromas and flavors that the wood brings to each cuv\u00e9e, as well as the smoothness it imparts. EXQUISITO and PARAISO are the two rums in the Facundo Collection that are finished in this way – EXQUISITO in sherry casks and PARAISO in French XO cognac casks. <\/p>\n Charcoal filtration: <\/strong>While monitoring the evolution from raw material to finished spirit, the master blender considers whether to further refine his rums by using activated charcoal to selectively filter out particular notes. This process brings out even finer, more distinctive aromatic profiles in each cuv\u00e9e, and achieves the highest levels of quality, balance and natural flavor. <\/p>\n The bottle: <\/strong> Each bottle in the collection has been carefully designed to pay homage to Cuba’s golden age, when the family’s magnificent Art Deco establishment, the Edificio Bacardi, completed in 1929, housed one of Havana’s most renowned bars of the 1930s, an era dubbed the “Golden Age of the Cocktail”.<\/p>\n FACUNDO NEO<\/strong><\/p>\n FACUNDO NEO is the most complex of blends.
