To celebrate the New Year and the traditional feast of Epiphany, Micha\u00ebl Bartocetti, Pastry Chef at the Shangri-La Hotel, Paris, has imagined a gourmet galette des rois for a moment of sharing and conviviality. Inspired by the Bauhinia, an exotic shrub whose flowers are reminiscent of those of an orchid, Chef Bartocetti has chosen to honor vanilla, whose delicate aroma comes from the pod produced by an orchid. The crispy caramelized puff pastry of this galette offers intense vanilla flavors: Madagascar, Ta\u00efthi, and roasted vanilla with a subtle licorice aroma. At the heart of the puff pastry is an unctuous almond frangipane cream with a floral vanilla fragrance, to delight the palate of sweet tooths. Finally, the puff pastry is topped with slivered almonds caramelized with honey and Ta\u00efthi vanilla, which crunch under the tooth, playing on the duality of textures and flavors.
