The perfect alchemy of pinot noir and complementary terroirs <\/strong>Sancerrois produces this magnificent Rabault! The result is a distinctive red Sancerre with a delicious bouquet of red fruit. <\/strong><\/h4>\n
\"\"<\/a>
\nThe Pinot Noir used to make this cuv\u00e9e comes from 5 hectares of vines around 25 years old, cultivated using integrated farming methods and planted on steep, sun-drenched “caillottes” and “terres blanches” soils (facing south and southeast).<\/h5>\n
Before disbudding in spring, which helps control yields, the soil is perfectly worked and the vines are pruned using Guyot Poussard. The grapes are hand-harvested when ripe. Vinification is carried out at controlled temperatures, with punching of the cap and pumping over, for a gentle extraction that respects the grape variety. <\/h5>\n
Ligurian finesse and freshness<\/strong><\/h5>\n
A bright, limpid ruby red, this wine opens with notes of cherries, blackberries and raspberries, enhanced by spicy touches and toast. Supple and greedy on the attack, the palate reproduces the fruity perfumes and aromatic finesse of the nose. It expresses itself with balance and intensity, volume and structure. <\/h5>\n
Fine, silky tannins combine with the freshness characteristic of Pinot Noir on this terroir, prolonging the tasting experience. Aging potential of 10 years. <\/h5>\n
Marrying Sancerre in red…<\/strong><\/h5>\n
Served between 14 and 16\u00b0C, this cuv\u00e9e can be enjoyed as an aperitif with a selection of charcuterie meats, as a starter with the famous P\u00e2t\u00e9 Berrichon, and with poultry, marinated or simmered veal, coq au vin, as well as eel en matelote, grilled fish and red fruit desserts.<\/h5>\n
