In the heart of the lobby of the newly renovated Hyatt Regency Paris Etoile, Mayo combines the conviviality of an afterwork with the simplicity of a Parisian bistro… Dedicated to celebrating French terroir products, Chef Rafael Casas has criss-crossed France in search of the best producers. The menu features some twenty dishes cooked with simplicity and boldness, paying homage to butchers (Metzger Fr\u00e8res), market gardeners (Comptoir des Producteurs), cheesemakers (La Ferme d’Alexandre) and bakers (Lalos). Here, sharing and conviviality come together: all dishes are for sharing, but –foodies<\/em> beware – can just as easily be enjoyed on their own. <\/p>\n
