For <em><strong>Valentine&#8217;s Day<\/strong><\/em>Denis Ruffel has decided to work on a classic: the Saint Honor\u00e9. Visually, it&#8217;s a mouth-watering heart to behold, gustatively, you&#8217;ll discover a shortbread pastry, choux pastry and small caramel-crusted choux filled with a lightened Italian meringue pastry cream sprinkled with small pieces of pistachio: a treat that will melt the sweetest hearts.
