{"id":2007042,"date":"2012-10-19T14:23:04","date_gmt":"2012-10-19T12:23:04","guid":{"rendered":"https:\/\/www.luxsure.fr\/2012\/10\/19\/marc-meneau-shares-his-recipe-for-lobster-with-green-tomato\/"},"modified":"2026-03-11T18:25:53","modified_gmt":"2026-03-11T17:25:53","slug":"marc-meneau-shares-his-recipe-for-lobster-with-green-tomato","status":"publish","type":"post","link":"https:\/\/www.luxsure.fr\/en\/2012\/10\/19\/marc-meneau-shares-his-recipe-for-lobster-with-green-tomato\/","title":{"rendered":"Marc Meneau shares his recipe for lobster with green tomato"},"content":{"rendered":"<p>HOMARD WITH GREEN TOMATO<\/p>\n<p>Recipe serves 4<br \/>\n <a href=\"https:\/\/www.luxsure.fr\/wp-content\/uploads\/2012\/10\/homardtomateverte1.003.jpg\" data-rel=\"penci-gallery-image-content\" ><img decoding=\"async\" src=\"https:\/\/www.luxsure.fr\/wp-content\/uploads\/2012\/10\/homardtomateverte1.003.jpg\" alt=\"\" title=\"lobstertomateverte1.003\" width=\"540\" height=\"723\" class=\"aligncenter size-full wp-image-40629\" srcset=\"https:\/\/www.luxsure.fr\/wp-content\/uploads\/2012\/10\/homardtomateverte1.003.jpg 540w, https:\/\/www.luxsure.fr\/wp-content\/uploads\/2012\/10\/homardtomateverte1.003-224x300.jpg 224w\" sizes=\"(max-width: 540px) 100vw, 540px\" \/><\/a><br \/>\nIngredients:<\/p>\n<p>2 pieces of lobster (500 gr)<br \/>\n8 Green Zebra tomatoes<br \/>\n6 garlic cloves<br \/>\n1 white onion<br \/>\n50 g whole blanched almonds<br \/>\n10 cl Provence olive oil<br \/>\n1 ml balsamic vinegar<\/p>\n<p>1 cooked Chiogga beet<br \/>\n1 cooked yellow beet<br \/>\n1 cooked beet<br \/>\n1 tablespoon sherry vinegar<br \/>\n100 g tempura batter<br \/>\n1 bay leaf<br \/>\n1 sprig thyme<br \/>\nSalt and pepper<\/p>\n<p>To prepare the green tomato sauce:<\/p>\n<p>&#8211; bake 6 tomatoes in the oven at 180\u00b0C for 1 hour with the garlic, almonds, thyme, bay leaf and chopped onion<br \/>\n&#8211; remove the herbs and blend, finishing with 7 cl olive oil, balsamic vinegar, salt and pepper.<br \/>\n&#8211; Keep warm<\/p>\n<p>Preparation of the lobsters:<\/p>\n<p>&#8211; cook the lobsters for 2 minutes in boiling water, then remove the tails and put the claws back on for 5 minutes without boiling.<br \/>\n&#8211; cut tails in half and roast in olive oil with shelled claws<br \/>\n&#8211; in a saucepan, gently heat the lobster meat with the remaining 3 cl of olive oil<\/p>\n<p>Preparing the filling :<\/p>\n<p>&#8211; thinly slice beets and sweat in olive oil<br \/>\n&#8211; season and deglaze with sherry vinegar<br \/>\n&#8211; Peel the two remaining green tomatoes and cut into thin slices, remove seeds and dip into the tempura, fry at 160\u00b0c and lightly salt as you leave the fryer.<\/p>\n<p>Presentation:<\/p>\n<p>On a plate, make an 8 cm by 3 cm rectangle with the tomato pur\u00e9e, place the beet on top, place the lobster on one side and decorate with a tomato fritter.<\/p>\n<p>Marc Meneau style: Marc Meneau&#8217;s cuisine is both rustic and refined.
